Almond Shortbread Cookie Dough

Tips for making cookies with kids

As you read this, I'm most likely happily immersed in a world of flour spills, sprinkle dumps and misplaced frosting smears. Translation: baking Christmas cookies with a 3-year-old.
My daughter and I started this three-generation tradition last year; and yes, 2-year-olds really can "help" bake cookies.
Think about your own childhood. If cookies weren't the first thing you baked with your mom (or dad), they were probably the most frequent reason behind any hands-on project in the kitchen.
But like anything, there's a good way to bake with kids, and there's a better way.
I turned to a few local experts — instructors who teach kids' cooking classes — for their advice on making a cookie-baking project with kids the best experience it can be (for everyone). Here are their tips:
 Have everything ready ahead before you call in the kiddos, advised Caroline Burkert of Kids Can Cook in Elm Grove. Ingredients out, equipment on the counter.
For her classes, held at Caroline's Cafe, she has cookies baked ahead so the kids sample first. "To taste what they're going to make is a big encouragement to them," she said.
 Pace yourself. If attention spans are short, do one tray with the kids and finish the rest later yourself. Or spread it out over a couple of days, suggests Nancy Kopperud, owner of The Petite Chef kids' cooking school, which just moved from Oconomowoc to Dousman.
She suggests phases: "one for decorated cookies that are the messiest, another for simpler drop cookies."
 Contain the mess. Kopperud gives each child a large baking sheet with sides (like a jellyroll pan) as their personal work space for decorating cookies. Just put a damp dish towel underneath to help keep it in place.
And wooden Popsicle sticks, she said, work great for kids as frosting spreaders.
 Consider the child's age. But don't discount the littlest ones! "Really, every step of the way kids can be involved, whether it's cracking eggs or measuring ingredients," said Kopperud. Or dumping in what you've measured. Or pushing the button on the mixer.
That said, "Work fast," Burkert advised. "Don't make it too involved."
Consider your recipe choices. Cut-out cookies are a natural. "Any sort of tool you can incorporate makes it more fun for them," Kopperud said. Working with a cookie press "is like packing it with Play-Doh," she said.
Cookies that need to be shaped by hand are also winners. "That's what kids like to do," said Burkert, "to get in there and handle the dough."
But stick to foolproof recipes, advised Laura Verage, which is what she does when doing kids' baking parties through her Colgate business,Cookies from Scratch. "This is not the time to try something new," she said.
 With older kids, especially, dig beneath the recipe. "I like to do cookies that have some history," Kopperud said. "Bring the story into it." For example, if she does a cookie with anise, she'll explain that it's an old German tradition.
 Don't micromanage —park your perfectionism at the kitchen door. "That's a mistake," Kopperud said of hovering parents. "I see that a lot. It's important to let the kids make their own masterpiece."
Finally, believe that it's worth the extra effort, time and mess.
"Learning baking fundamentals is something you carry with you forever," said Verage.

Almond Shortbread Cookie Dough

Caroline Burkert likes this recipe for kids because it can be worked and reworked (kids like to handle dough) and won’t get tough or overfloured the way sugar cookie dough can. “It’s very forgiving,” she said.

With her students, she divides a batch into three parts to make three different kinds of cookies. We’ve included one of those here.

Ingredients

½ cup granulated sugar (see note)
¾ cup slivered almonds (see note)
1 ½ cups (3 sticks) butter, room temperature
4 teaspoons vanilla extract
¼ teaspoon almond extract
3 cups flour

Preparation

If you have a food processor, process the sugar 30 to 60 seconds until powdery. Transfer to a bowl; add almonds to food processor and process until very finely chopped. Add to bowl.

Using a mixer, cut in butter and extracts. Add flour until thoroughly mixed. (Dough can be made entirely in a food processor; once flour has been added, process until a ball forms.)

Dough can now be divided and used to make a variety of cookies, such as Chocolate Thumbprints, linzer cookies or nut crescents.

Notes: If you don’t have a food processor, you can skip that step; or you can use superfine sugar. You also can substitute ½ cup plus 1 tablespoon ground almonds for the slivered almonds you would process yourself.

Chocolate Thumbprints

With her students, Caroline Burkert divides a batch of almond shortbread cookie dough into three parts to make three different kinds of cookies. We’ve included one of those here.
 

Makes 30

Ingredients

1/3 batch of almond shortbread cookie dough (see recipe)
¼ cup coarse sugar
½ cup semisweet chocolate chips
2 tablespoons butter

Preparation

Preheat oven to 325 degrees.

Using about 1 teaspoon of dough for each, shape into 30 balls. Dip in sugar. Place on ungreased cookie sheet 1 inch apart. Press center with your thumb to make an indentation.

Bake in preheated oven 10 minutes, then turn pan around and bake 8 to 10 minutes more until lightly browned. Remove to rack to cool.

Melt chocolate chips and butter together in microwave for 20 to 30 seconds. Stir until smooth. Fill centers of cooled cookies with chocolate and let set.

소 갈비찜



명절에 빠지면 섭한 고기요리..
바로 갈비찜이죠...
갈비찜 맛나게 만드는 방법을 알려드릴게요....
이렇게 만들면 누구라도 맛있게 만들  있습니다...!! ㅎㅎ
   
쇠갈비찜은 특별한 그리고 명절같은 때에 정말 큰맘 먹고 만드는 음식이죠?
일부러 만들었는데비싼 고기 망치면 안되고 말이죠..ㅋㅋ
질기거나 간이 맞지 않으면 정말로 기가 차고 속상한 일일테고요~~
들인 돈이 아깝지 않을만큼 맛있는 쇠갈비찜을 한번 만들어 볼께요~~~~^^
   
   
   
쇠갈비찜 (3-4인분)
재료준비 (종이컵과 밥숟가락 계량입니다.)
   
주재료쇠갈비(1kg), (5*5cm 짜리 2토막), (7), 대추(7), 붉은 고추(1), 청양고추(1),대파(1)
양념장재료(작은  2분의 1), 양파( 2분의 1), 다진 마늘(2), 다진 생강(0.3), 간장(12), 소스(1), 맛술(5), 청주(4), 물엿(3), 흑설탕(2), 핫소스(2), 후춧가루(0.3), 참기름(0.5)
   
   
   
   
   
야들야들 윤기도 좔좔~~
쇠갈비찜...^^
   
   
   
   
   
쇠갈비는  물에 담가 3-4시간 정도 핏물을 빼고중간에 물을 2-3차례 깨끗한 물로 갈아줍니다.
   
갈비를  미리  있는 부분을 깨끗하게 씻고찬물에 담가 주시고졸졸 또르르르 흐르는 물에 계속해서 담가 두거나아니면 몇차레 물을 갈아 주면서 담가 두셔야 쇠갈비가 가진 고기의 누린내를 없앨 있어서 좋답니다...
   
   
   
   
   
핏물을  쇠갈비는 팔팔 물이 끓을 끓고 있는 물에 넣고  5분간 데친 다음....
   
   
   
   
   
데친 갈비를 찬물에 깨끗하게 씻어줍니다......
   
   
   
   
   
양념 재료  양파와 배를 믹서에 넣고....
   
   
   
   
   
   
 갈아주기....^^
   
   
   
   
   
갈아 놓은 배와 양파에 나머지 양념장 재료인 다진 마늘(2), 다진 생강(0.3), 간장(12),  소스(1), 맛술(5), 청주(4), 물엿(3), 흑설탕(2), 핫소스(2), 후춧가루(0.3), 참기름(0.5)  섞어 양념장을 완성합니다...
   
양념재료에 들어가는 재료들 중에  소스는 있으면 넣으시고없으면 생략해도 좋아요...^^

나머지 양념들을 넣고서 믹서기 안을 헹궈주는 것이지요...^^
   
   
   
   
   
이렇게해서 만들어진 쇠갈비양념장....
배와 양파 간것에 나머지 양념장에 들어가는 양념들을 섞어주면 다음과 같은 넉넉한 양의 갈비찜양념장이 만들어져요....
   
   
   
   
   
데친 쇠갈비에 만들어 놓은 양념장을 모두 붓고...
   
   
   
   
   
불에 올려서 고기가 연하게 익도록 바글바글 끓여주고...
끓이는 중간중간 위로  기름을 숟가락을 이용해서 걷어주고...
   
 과정에서 중간에 기름을 걷어 내는 동안만 뚜껑을 열어두고나머지 시간은 뚜껑을 닫고  무르게 고기가 익을  있게 닫아서 익혀주세요..
그래야 고기가 연하게 야들야들 뼈에서 살짝 분리가   있도록 연하게 익혀진답니다.
 고기양념 안에 들어간 재료인 양파와 배가 고기를 연하게 해주는 역할을 하고요..
   
   
   
   
   
고기가 익는 동안 무를 적당한 크기로 모양내서 돌려깍아 자르고밤은 껍질을 벗기고붉은 고추와 대파청양고추는 어슷하게 썰어 두고....
   
무는  모양처럼 다듬으면 모양도 예쁘고  익는답니다.
   
   
   
   
   
고기가 익으면 손질해 놓은 붉은 고추대추를 넣고 끓이고....
   
   
   
   
   
밤과 무가 익고 국물이 자작하게 졸아들면마지막으로 대파  것을 넣고 한소끔  끓여주면 ....

 비교적 가격대가 저렴한 호주산 냉장갈비를 사용해서 만들었어요...
(가격이 정말 저렴하긴 해요..그리고 고기에 먹을 살이 많이 붙어 있어서 좋고요...)
비교적 저렴하다고 하더라도 그래도 비싼 값을 주고 만든 고기요리느 실패가 두려워서 못하는 분들이많아요..... 일반 채소요리보다 아무래도 가격이  나가니깐요...
미리 이렇게 한번 시험삼아 만들어 드셔보시고...
그리고 명절때 제대로 솜씨한번 부려보시면 좋을것 같네요..^^
   
   
   
   
   
항상  명절에 고기요리를 할때...
이렇게 만든 소갈비찜이나아니면 쇠고기나 돼지갈비를 뼈마디가 보이게 해서 만든 LA 갈비를 주로 재워 가거나 한답니다....
그러면 가족들이 모두 참으로 좋아라 하지요...^^

갈비를 처음에 데쳐서 누린내를 없애고..
그리고 중간중간 걷어낸 기름...
나중에는 잘박하게 남은 담백하고 달짝한 국물까지 싹싹....
맛있게 밥에 비벼도 먹고....
연하게 간장빛이 거무스름한 갈비찜에 절로 살찌는 소리가 들립니다....
이상하게 9월이 되어가니깐 벌써부터 명절이구나~~하는 생각부터 들어지네요..ㅋㅋ
